Whether you’re grilling, baking, or pan-searing, this recipe is sure to impress your family and friends with its irresistible caramelized glaze and juicy, flavorful meat.

Ingredients

Scale
  • 1/2 cup brown sugar
  • 1/2 cup pineapple juice
  • 1/3 cup low-sodium soy sauce
  • 2 tablespoon olive oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes
  • 2 pound boneless, skinless chicken thighs or breasts
  • 1 tablespoon oil for searing or grilling

Instructions

1. In a medium bowl or large resealable bag, whisk together all the marinade ingredients. Add the chicken and toss to coat evenly. Seal the bag or cover the bowl and refrigerate for at least 1 hour, or preferably overnight, to allow the flavors to fully infuse the meat.

2. Preheat your grill to medium-high and lightly oil the grates. Grill the chicken for 5–6 minutes per side, or until the internal temperature reaches 165°F. Brush the chicken with any remaining marinade during the last few minutes of cooking for a delicious, caramelized glaze. Discard any leftover marinade.

3. Preheat your oven to 400°F. Arrange the marinated chicken in a baking dish. Bake for 20–25 minutes, basting the chicken with the remaining marinade once or twice, until the chicken is golden and cooked through.

4. Heat 1 tablespoon of oil in a skillet over medium-high heat. Cook the chicken for 5–7 minutes per side, until nicely caramelized and cooked through. During the last 2 minutes, add a splash of the leftover marinade to the pan for a quick glaze.

5. Allow the chicken to rest for 5 minutes before slicing. Garnish with sliced green onions and sesame seeds, if desired. Serve the 5-Star Brown Sugar Pineapple Chicken with your favorite sides.

Notes

Store any leftover 5-Star Brown Sugar Pineapple Chicken in an airtight container in the refrigerator for up to 4 days.
