Ingredients
- 2 cucumbers
- 1/4 cup rice vinegar
- 2 tablespoon soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1/4 teaspoon chili flakes
- 2 tablespoon sesame seeds
- 1/4 cup chopped cilantro
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Slice the Cucumbers: Wash the cucumbers and slice them into thin, even pieces.
2. Make the Dressing: In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, honey, chili flakes, salt, and black pepper.
3. Combine and Toss: Place the sliced cucumbers in a serving bowl. Pour the dressing over the cucumbers and add the sesame seeds and chopped cilantro. Gently toss the salad until all the ingredients are evenly coated.
4. Chill and Serve: Let the salad chill in the refrigerator for 10-15 minutes before serving.
Notes
For a spicy kick, add extra chili flakes or a drizzle of spicy chili oil. You can also experiment with adding julienned carrots, sliced bell peppers, or thinly sliced radishes for extra crunch and color.
