Description

Autumn Harvest Honeycrisp Apple and Feta Salad is a delightful and refreshing way to celebrate the bounty of fall, combining the sweet-tart crunch of Honeycrisp apples, tangy feta cheese, and nutty walnuts in an apple cider vinaigrette.

Ingredients

Scale
  • 4 cup mixed greens
  • 2 Honeycrisp apples, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/3 cup chopped walnuts
  • 1/4 cup dried cranberries
  • 2 tablespoon olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey
  • Salt and black pepper to taste

Instructions

  1. In a small bowl or mason jar, whisk together the olive oil, apple cider vinegar, and honey until well blended. Season with a pinch of salt and black pepper to taste. Adjust the sweetness by adding a touch more honey if desired.
  2. For an extra layer of flavor, you can toast the walnuts in a dry skillet over medium heat for a few minutes until fragrant. This step is optional but highly recommended.
  3. In a large salad bowl, arrange the mixed greens as the base. Scatter the thinly sliced Honeycrisp apples, crumbled feta cheese, chopped walnuts, and dried cranberries over the greens.
  4. Pour the prepared dressing over the salad. Using salad tongs, gently toss the salad from the bottom, lifting and turning the ingredients carefully to avoid mashing the apple slices or breaking up the feta too much.
  5. Serve the Autumn Harvest Honeycrisp Apple and Feta Salad immediately for the best texture and flavor.

Notes

This salad can be adapted with different apple varieties or cheese alternatives based on dietary needs. Consider adding roasted butternut squash cubes or pomegranate seeds for seasonal variations.
