Ingredients
- 4 large flour tortillas
- 8 slices bacon, cooked and crumbled
- 4 large eggs
- 2 tablespoon milk
- Salt and pepper, to taste
- 2 tablespoon butter, divided
- 1 cup shredded cheese (such as cheddar, pepper jack, or a Mexican blend)
Instructions
1. Cook the Bacon: In a large skillet, cook the bacon over medium-high heat until crisp. Drain the bacon on a paper towel-lined plate, then crumble it into bite-sized pieces.
2. Scramble the Eggs: In a medium bowl, whisk together the eggs, milk, salt, and pepper. Melt 1 tablespoon of butter in the skillet over medium-low heat. Pour in the egg mixture and cook, stirring gently, until the eggs are soft and fluffy.
3. Assemble the Quesadillas: Heat a separate large skillet or griddle over medium-high heat. Melt the remaining 1 tablespoon of butter in the pan. Place one tortilla in the skillet, sprinkle half the cheese over half the tortilla, add half the scrambled eggs and half the crumbled bacon, then top with the remaining cheese. Place a second tortilla on top (or fold the tortilla in half if using one).
4. Toast the Quesadilla: Cook the quesadilla for 2-3 minutes per side, or until the outer tortilla is golden brown and the cheese inside has melted.
5. Serve: Remove the quesadilla from the heat, slice each one in half, and serve immediately.
Notes
To make your quesadillas healthier, consider using whole grain or spinach tortillas instead of regular flour tortillas. You can also reduce the amount of cheese or opt for a lower-fat cheese alternative. Adding more vegetables can increase nutritional value while adding flavor.
