Crispy, Creamy Bacon Jalapeño Popper Egg Rolls are a perfect crowd-pleasing appetizer that combines the creaminess of jalapeño poppers with the crunch of egg roll wrappers and smoky bacon.
Ingredients
- 8 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 4–5 fresh jalapeños, finely chopped (seeds removed)
- 15 eggroll wrappers
- Vegetable oil for frying
Instructions
1. Combine cream cheese, cheddar cheese, crumbled bacon, and jalapeños in a bowl until well blended.
2. Lay an eggroll wrapper on a flat surface and place about 2 tablespoons of filling in the center.
3. Fold the bottom corner over the filling, fold in the sides, and roll tightly. Seal the edge with water.
4. Heat vegetable oil in a skillet to 350°F (175°C).
5. Fry egg rolls for 2-3 minutes per side until golden brown and crispy.
6. Remove from oil and drain on paper towels. Serve hot with dipping sauces.
Notes
You can freeze these egg rolls for later. Assemble, freeze until solid, then transfer to a container. Fry directly from frozen.
For best results, roll tightly and seal edges properly to prevent splitting during frying.
