- 1 tablespoon olive oil
- 6 slices bacon, chopped
- Salt and black pepper (to taste)
- 2 tablespoon butter
- 2 cloves garlic, minced
- 1 cup chicken broth
- 2 tablespoon Dijon mustard
- 3/4 cup heavy cream
- 1 teaspoon maple syrup (optional)
- 1 teaspoon fresh thyme (or 1/2 teaspoon dried, optional)
- Chopped parsley (for serving, optional)
Instructions
- In a large skillet over medium heat, cook chopped bacon until crisp. Transfer the bacon to a plate, leaving about 1 to 2 tablespoon of bacon fat in the pan.
- Season the pork chops with salt and pepper. Add olive oil to the pan if needed, then sear the pork chops for 3 to 5 minutes per side until they are browned and cooked through (145°F).
- Reduce the heat to medium and add the butter and garlic to the pan. Cook for 30 seconds, then pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Stir in the Dijon mustard, heavy cream, maple syrup (if using), and thyme. Simmer for 3 to 5 minutes until the sauce has slightly thickened.
- Return the pork chops to the skillet and spoon the Dijon cream sauce over the top. Top with the crispy bacon and chopped parsley, then serve hot.
