Description

Bacon-Wrapped Meatloaf with Garlic Mashed Potatoes is a comforting classic that combines savory bacon with a tender meatloaf, served over creamy garlic mashed potatoes.


Ingredients

  • 2 pound ground beef
  • 1/2 cup breadcrumbs
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1012 slices bacon
  • 2 pound potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/2 cup butter
  • 1/2 cup milk or heavy cream
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large bowl, combine the ground beef, breadcrumbs, chopped onion, minced garlic, eggs, milk, Parmesan cheese, Worcestershire sauce, oregano, thyme, salt, and pepper. Mix until just combined.
  3. Shape the meatloaf mixture into a loaf and place it on a baking sheet or in a loaf pan. Lay the slices of bacon over the top, tucking the ends under.
  4. Bake for about 1 hour, or until the internal temperature reaches 160°F.
  5. While the meatloaf is baking, boil the peeled and cubed potatoes with the minced garlic in salted water until fork-tender, about 15 minutes.
  6. Drain the potatoes and garlic well, then mash until smooth. Add the butter and milk or cream, and season with salt and pepper to taste. Stir in the chopped parsley if using.
  7. Once the meatloaf has rested for a few minutes, slice it and serve it over the garlic mashed potatoes.

Notes

For added flavor, consider drizzling barbecue or steak sauce over the meatloaf slices.
