  • 1 cup breadcrumbs
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • 2 large eggs, beaten
  • 1/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.

2. Steam the broccoli florets until tender-crisp, then finely chop them until they resemble coarse rice.

3. In a large bowl, combine the chopped broccoli, breadcrumbs, cheddar cheese, Parmesan cheese, beaten eggs, flour, garlic powder, onion powder, salt, and pepper. Mix until well incorporated.

4. Using your hands or a small cookie scoop, roll the mixture into 1-inch balls and place them on the prepared baking sheet.
