Description

Baked Cheesy Mushrooms Casserole is a comforting and flavor-packed dish that’s perfect for any occasion. This vegetarian-friendly recipe combines a blend of savory mushrooms, creamy cheeses, and a crispy breadcrumb topping to create a dish that’s simply irresistible.


Ingredients

  • 1 pound button mushrooms, cleaned and sliced
  • 1 cup cheddar cheese, grated
  • 1/2 cup mozzarella cheese, grated
  • 1/2 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 2 tablespoon unsalted butter
  • Salt and pepper, to taste

Instructions

1. In a large skillet, melt 1 tablespoon of butter over medium heat. Add the chopped onions and sauté until translucent, about 5 minutes. Then, add the minced garlic and cook for another minute until fragrant. Next, add the sliced mushrooms, season with salt and pepper, and cook until softened and any released moisture has evaporated, about 7–8 minutes. Remove the mixture from the heat and let it cool slightly.

2. In a large bowl, combine the cream cheese and sour cream. Stir in the grated cheddar and mozzarella cheeses. Season with salt and pepper to taste, and mix until well combined.

3. Preheat your oven to 350°F. Grease a baking dish with the remaining 1 tablespoon of butter. Spread the sautéed mushroom mixture evenly in the bottom of the dish. Dollop the cheese mixture over the mushrooms and spread it out evenly. Sprinkle the breadcrumbs on top.

4. Place the casserole in the preheated oven and bake for 25–30 minutes, or until the top is golden brown and the cheese is bubbly.
