Ingredients
- 1 package (14.1 ounce) frozen puff pastry sheets, thawed
- 1 large egg, beaten (for egg wash)
- 1 tablespoon olive oil
- 1 shallot, finely chopped
- 2 cloves garlic, minced
- 10 ounce fresh spinach, washed and roughly chopped
- 4 ounce cream cheese, softened
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 teaspoon nutmeg
- Salt and freshly ground black pepper to taste
- 4 large eggs
- Fresh chives, chopped (for garnish)
Instructions
1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
2. Unfold the thawed puff pastry sheets and cut them into your desired shapes. Brush the pastry with the beaten egg, then sprinkle with everything bagel seasoning if desired.
3. Place the prepared pastry shells on the lined baking sheet and bake for 12-15 minutes, or until golden brown and puffed. Allow to cool slightly before assembling.
4. In a skillet over medium heat, sauté the shallot and garlic in olive oil until fragrant. Add the chopped spinach and cook until wilted. Stir in cream cheese, heavy cream, Parmesan, nutmeg, salt, and pepper until smooth.
5. Spoon the creamy spinach filling into the center of each baked puff pastry shell. Crack an egg into the well of each shell.
6. Return the filled pastry shells to the oven and bake for 8-12 minutes, or until the eggs are cooked to your desired level of doneness.
7. Sprinkle with chopped fresh chives and serve warm.
