This Mediterranean-inspired dish is a harmonious blend of creamy feta cheese, roasted garlic, and tender potato wedges, all infused with a delightful medley of herbs and spices. Whether you’re looking for a comforting side dish or a satisfying vegetarian main, this recipe is sure to captivate your taste buds and transport you to the sun-drenched corners of the Mediterranean.

Ingredients

Scale
  • 2 large baking potatoes, washed and cut into thick wedges
  • 200 grams feta cheese
  • 2 tablespoon olive oil
  • 1 head garlic, top sliced off
  • 1 lemon, quartered
  • Fresh basil leaves for garnish
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon red chili flakes
  • 1 tablespoon honey

Instructions

1. Preheat your oven to 400°F. Line a baking dish with parchment paper or lightly grease it.

2. Wash the potatoes thoroughly and cut them into thick wedges, approximately 1-inch thick. Place the potato wedges in the prepared baking dish.

3. Drizzle the olive oil over the potato wedges, ensuring they are evenly coated. Sprinkle the dried thyme, oregano, salt, black pepper, and red chili flakes over the potatoes, and toss everything together to distribute the seasonings evenly.

4. Slice the top off the head of garlic to expose the cloves, and nestle it among the potato wedges. Crumble or place the whole block of feta cheese in the center of the baking dish.

5. Arrange the lemon quarters around the baking dish, then place the dish in the preheated oven. Bake for 35-40 minutes, or until the potatoes are golden-brown and tender, and the feta cheese is slightly browned and bubbling.

6. Once the Baked Feta Potatoes are out of the oven, use a fork to gently squeeze the roasted garlic cloves out of their skins and mix them into the potatoes and feta. Drizzle the honey over the top of the dish, and garnish with fresh basil leaves.

7. Serve the Baked Feta Potatoes warm, allowing the flavors to meld and the cheese to become deliciously creamy.

Notes

The combination of creamy feta, fragrant garlic, and aromatic herbs creates a flavor profile that is both comforting and captivating. While feta cheese is the star of the show, lemon, honey, and chili flakes add a delightful balance of tangy, sweet, and slightly spicy notes.
