Description
These Baked Garlic Butter Potatoes are irresistibly crispy on the outside and perfectly tender on the inside. Coated in a rich garlic butter herb blend, they’re the ultimate side dish for weeknights, holidays, or any comfort food craving.
Ingredients
-
2 pounds potatoes (Yukon Gold or Russet work best)
-
4 tablespoons unsalted butter, melted
-
4 cloves garlic, minced
-
2 tablespoons olive oil
-
1 teaspoon dried rosemary (or your favorite herb)
-
Salt and pepper to taste
-
Fresh parsley for garnish (optional)
Instructions
-
Preheat the oven to 400°F (200°C).
-
Wash and peel the potatoes if desired. Cut them into 1-inch cubes for even roasting.
-
In a small bowl, combine the melted butter, olive oil, minced garlic, rosemary, salt, and pepper.
-
Toss the potatoes with the garlic butter mixture until evenly coated.
-
Spread potatoes on a baking sheet in a single layer, making sure they aren’t overcrowded.
-
Bake for 25–30 minutes, flipping once halfway through. They should be golden and crispy on the edges.
-
Remove from oven, garnish with chopped parsley, and serve immediately.
Notes
-
For extra crispiness, soak the potato cubes in cold water for 30 minutes before roasting. Dry them completely before tossing in garlic butter.
-
Swap rosemary with thyme, oregano, or Italian seasoning for a flavor twist.
-
This recipe pairs beautifully with roasted chicken, grilled meats, or veggie mains.
-
Leftovers can be stored in the fridge for up to 3 days and reheated in the oven to keep the crisp.
