Description

Balsamic Chicken & Veggie Orzo is a one-pot meal combining tender chicken, fresh vegetables, and balsamic vinegar for a flavorful dish.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup orzo pasta
  • 2 cup chicken broth
  • 1/4 cup balsamic vinegar
  • 2 tablespoon honey
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Season the chicken with salt and pepper, then heat a large skillet over medium-high heat with olive oil. Add the chicken and sauté for 4-5 minutes until browned. Transfer the chicken to a plate and set aside.
  2. In the same skillet, add the onion and cook for 2 minutes. Stir in the garlic and cook for 30 seconds. Add the zucchini and red bell pepper, sauté for 3-4 minutes until softened.
  3. Add the orzo, chicken broth, balsamic vinegar, honey, Italian seasoning, and red pepper flakes. Bring to a gentle boil, reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender.
  4. Return the chicken to the skillet and cook for 2-3 minutes until fully cooked. Stir in cherry tomatoes and let them wilt slightly. If desired, stir in Parmesan cheese.
  5. Taste and adjust seasoning, adding more balsamic vinegar if needed.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.
