Description
Balsamic Chicken & Veggie Orzo is a one-pot meal combining tender chicken, fresh vegetables, and balsamic vinegar for a flavorful dish.

- 1 pound boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 medium zucchini, diced
- 1 red bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 cup orzo pasta
- 2 cup chicken broth
- 1/4 cup balsamic vinegar
- 2 tablespoon honey
- 1 teaspoon Italian seasoning
- 1/4 teaspoon red pepper flakes
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
Instructions
- Season the chicken with salt and pepper, then heat a large skillet over medium-high heat with olive oil. Add the chicken and sauté for 4-5 minutes until browned. Transfer the chicken to a plate and set aside.
- In the same skillet, add the onion and cook for 2 minutes. Stir in the garlic and cook for 30 seconds. Add the zucchini and red bell pepper, sauté for 3-4 minutes until softened.
- Add the orzo, chicken broth, balsamic vinegar, honey, Italian seasoning, and red pepper flakes. Bring to a gentle boil, reduce heat to low, cover, and simmer for 10-12 minutes until orzo is tender.
- Return the chicken to the skillet and cook for 2-3 minutes until fully cooked. Stir in cherry tomatoes and let them wilt slightly. If desired, stir in Parmesan cheese.
- Taste and adjust seasoning, adding more balsamic vinegar if needed.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or on the stovetop.
