Description

Banana bread is a beloved comfort food that is moist, fragrant, and a delightful way to use up overripe bananas.


Ingredients

  • Ripe bananas (about 1 1/4 to 1 1/2 cups mashed)
  • All-purpose flour
  • Granulated sugar
  • Unsalted butter (or oil)
  • Eggs
  • Baking soda
  • Vanilla extract
  • Ground cinnamon and nutmeg
  • Chopped nuts (optional)
  • Chocolate chips or chunks (optional)
  • Streusel topping (optional)
  • Cream cheese swirl (optional)
  • Lemon or orange zest (optional)
  • Shredded coconut (optional)

Instructions

1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. In a large bowl, combine the melted unsalted butter and granulated sugar. Stir in the mashed ripe bananas, the beaten egg, and vanilla extract until well combined.

3. Sprinkle the baking soda, ground cinnamon, and ground nutmeg over the wet ingredients. Gently fold in the all-purpose flour until just combined, being careful not to overmix the batter.

4. Pour the Banana Bread batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.

5. Allow the Banana Bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Notes

Banana bread freezes very well. Wrap the cooled bread tightly in plastic wrap or aluminum foil, and place it in an airtight container or freezer bag. It can be frozen for up to 3 months.
