Ingredients

Scale
  • 1 cup mashed ripe bananas
  • 2 large eggs
  • 1/2 cup pure maple syrup
  • 3/4 cup creamy peanut butter
  • 1/4 cup avocado oil or unsweetened applesauce
  • 2 teaspoon vanilla extract
  • 2 1/2 cup old-fashioned rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon kosher salt
  • 3/4 cup chocolate chips

Instructions

1. Preheat Oven: Set your oven to 350 °F. Line a 9×9-inch baking pan with parchment paper and lightly grease it.

2. Mix Wet Ingredients: In a large bowl, mash the ripe bananas until they’re smooth. Add the eggs, maple syrup, peanut butter, avocado oil (or applesauce), and vanilla extract. Whisk everything together until it’s fully combined.

3. Add Dry Ingredients: Stir in the oats, baking powder, cinnamon, and salt until you have a thick, well-mixed batter. Fold in the chocolate chips.

4. Bake: Pour the batter into the prepared baking pan and spread it evenly. If you’re using extra chocolate chips, sprinkle them on top now. Bake for 28–35 minutes, or until the edges are golden and the center is set.

5. Cool and Slice: Allow the Banana Oatmeal Bars to cool completely in the pan before slicing them into squares.

Notes

These Banana Oatmeal Bars are a versatile treat that can be enjoyed in a variety of ways. For a satisfying breakfast, pair them with a cup of Greek yogurt and fresh berries. As a midday snack, they’re the perfect pick-me-up to fuel your day. And for a decadent dessert, top them with a dollop of whipped cream or a scoop of your favorite ice cream.
