Ingredients

  • 2 cup fresh blueberries
  • ⅓ cup sugar
  • 1 tablespoon lemon juice
  • 7 tablespoon water, divided
  • 3 tablespoon cornstarch
  • 8 ounce cream cheese, room temperature
  • ⅓ cup sugar
  • 1 teaspoon lemon juice
  • 1 teaspoon vanilla extract
  • 12 egg roll wrappers
  • 2 cup vegetable oil
  • ¼ cup powdered sugar, for dusting

Instructions

  1. In a small saucepan over medium heat, combine the fresh blueberries, sugar, 3 tablespoon of water, and lemon juice. Stir occasionally and cook until the blueberries burst and the mixture comes to a boil, about 3-4 minutes.
  2. In a small bowl, whisk together the remaining 4 tablespoon of water and the cornstarch until smooth. Gradually pour this slurry into the boiling blueberry mixture, stirring continuously until it thickens to a spreadable consistency. Remove from heat and let cool completely.
  3. In a medium bowl, use an electric mixer to beat the cream cheese for 2-3 minutes until light and fluffy. Add the sugar, lemon juice, and vanilla extract, and continue beating for an additional 2 minutes until smooth.
  4. Place one egg roll wrapper on a clean surface. Spoon about 2 tablespoon of the cream cheese filling into the center, then top with a heaping spoonful of the blueberry mixture. Moisten the edges with water, fold the sides over the filling, and roll tightly to seal.
  5. In a large skillet or frying pan, heat 2 cup of vegetable oil over medium heat until it reaches 375°F. Carefully add a few egg rolls at a time and fry until golden brown and crispy.
  6. Transfer the cooked egg rolls to a paper towel-lined plate to drain excess oil. Dust with powdered sugar before serving.
