  • 1/2 cup gluten-free oat flour

  • 1/4 cup brown sugar

  • 1 cup grated zucchini, squeezed dry
  • 1/2 cup fresh blueberries
  • 1/4 cup lemon juice
  • 2 tablespoon lemon zest
  • 1/4 cup melted coconut oil
  • 1 egg
  • 1 teaspoon vanilla extract

Instructions

1. Preheat your oven to 350°F. Line an 8×8-inch baking pan with parchment paper for easy removal and cleanup.

2. In a large bowl, combine the gluten-free rolled oats, oat flour, almond flour, brown sugar, baking powder, cinnamon, and salt. Stir to combine.

3. Stir in the grated zucchini, lemon juice, lemon zest, melted coconut oil, egg, and vanilla extract. Mix until everything is well combined.

4. Gently fold in the fresh blueberries, being careful not to overmix.

5. Pour the mixture into the prepared baking pan and spread it out evenly. Bake for 25–30 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.

6. Allow the bars to cool completely in the pan before slicing and serving.
