- 1 pound boneless, skinless chicken breast
- 1 cup orzo pasta
- 2 cup low-sodium chicken broth
- 8 ounce Boursin cheese
- 1 cup cherry tomatoes
- 1 medium zucchini
- 1/2 medium red onion
- 3 cloves garlic
- 2 tablespoon olive oil
- 1 tablespoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cup baby spinach
- 1/4 cup grated Parmesan cheese (optional)
- 1/4 cup fresh parsley or basil (optional)
Instructions
- Preheat oven to 425°F and lightly oil a 9×13-inch baking dish.
- In the prepared baking dish, combine the dry orzo, chicken broth, olive oil, Italian seasoning, salt, pepper, cherry tomatoes, zucchini, red onion, and minced garlic. Gently nestle the Boursin cheese in the center.
- Cover the dish tightly with foil and bake for 25 to 30 minutes, or until the orzo is nearly tender and the chicken is cooked through.
- Remove the foil and stir well to melt and distribute the Boursin cheese.
- Stir in the baby spinach until wilted. If using Parmesan, sprinkle it on top.
- Bake uncovered for another 5 to 8 minutes, or until the top is lightly browned.
Notes
The Boursin Orzo Bake is a versatile dish; feel free to add other vegetables like bell peppers or mushrooms. It can also be frozen for future meals.
