Ingredients

- 2 tablespoon butter
- 2 cup cooked tater tots
- 1 cup shredded Pepper Jack cheese
- 1 cup shredded cheddar cheese
- 10 fajita-size flour tortillas
Instructions
- Cook the breakfast sausage in a large pan over medium-high heat, crumbling it as it cooks. Once the sausage is about halfway done, add the diced onion and minced jalapeño. Continue cooking until the sausage is fully cooked through.
- Remove 1 cup of the sausage mixture and set it aside. Sprinkle the all-purpose flour into the remaining sausage in the pan and cook for 1 minute, stirring constantly. Gradually whisk in the milk, bringing the mixture to a simmer until it thickens into a creamy, luscious gravy.
- Preheat your oven to 350°F and grease a 9×13-inch baking dish. In a separate skillet, melt the butter and scramble the eggs with salt and pepper until they’re just undercooked. Remove the eggs from the heat.
