Description
Breakfast Tacos are the ultimate morning meal – a delectable fusion of fluffy scrambled eggs, melted cheese, and savory protein wrapped in a warm tortilla. These versatile handheld bites are not only quick and easy to prepare but also packed with nutrients to fuel your day.
Ingredients
- 4 large eggs
- 1/2 cup shredded cheese
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 4 small flour tortillas
- 1/4 cup cooked bacon or sausage (optional)
- Salt and pepper to taste
- 1 tbsp butter or oil
Instructions
1. Sauté the Veggies: In a skillet over medium heat, sauté the diced bell peppers and onions in a bit of butter or oil until they’re softened and fragrant, about 3-4 minutes.
2. Scramble the Eggs: In a bowl, whisk the eggs with a pinch of salt and pepper. Pour the eggs into the skillet with the sautéed vegetables and gently scramble until fully cooked.
3. Add the Meat (Optional): If using, stir in the cooked bacon or sausage and let it heat through, about 1 minute.
4. Warm the Tortillas: Heat the flour tortillas in a dry skillet or the microwave for 15-20 seconds to make them pliable and easy to roll.
5. Assemble and Top: Spoon the egg mixture evenly onto each tortilla, then sprinkle the shredded cheese on top, allowing it to melt slightly.
Notes
To prevent soggy Breakfast Tacos, be sure not to overstuff the tortillas and eat them immediately after assembling.
Warming the tortillas briefly before filling them can also help keep them from becoming too soft and wet.
Properly stored, Breakfast Tacos will typically last 3-4 days in the refrigerator.
