Ingredients

  • 1 lb ground chicken
  • 1 cup buffalo sauce, divided
  • 8 ounce block mozzarella cheese, cut into bite-sized cubes
  • 6 slices bacon, cooked and crumbled
  • 1 cup breadcrumbs (panko or regular)
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Oil for frying (vegetable or canola)

Instructions

  1. Cut the mozzarella block into even, bite-sized cubes and wrap each cube with a small amount of crumbled bacon. Set aside on a plate.
  2. In a large bowl, combine the ground chicken, garlic powder, onion powder, paprika, salt, pepper, and 1/2 cup of buffalo sauce. Mix until the chicken is sticky and evenly seasoned.
  3. Take a golf ball-sized portion of the chicken mixture and flatten it in your palm. Place one of the bacon-wrapped cheese cubes in the center. Enclose the filling completely by pinching the edges and sealing them tightly. Roll into a smooth shape. Repeat with remaining mixture.
  4. Roll each chicken ball in flour, shaking off excess. Dip into beaten eggs until fully coated. Roll in breadcrumbs, pressing gently for an even coating. Place on a baking sheet.
  5. To fry, heat oil in a deep fryer or skillet to 350°F. Lower bombs into hot oil and cook for 5 to 6 minutes until golden brown and chicken is fully cooked.
  6. For baking, arrange bombs on a greased baking sheet, spray tops with oil, and bake at 400°F for 18 to 20 minutes, flipping halfway through.
  7. Toss freshly fried or baked bombs with remaining buffalo sauce and serve hot.

Notes

These bombs can be prepared ahead of time and frozen until firm. Cook from frozen by adding extra time to cooking.
