- 2 tablespoon olive oil
- 8 ounce thick-cut bacon
- 1/2 cup brown sugar
- 1/4 cup granulated sugar

- 1/4 teaspoon cayenne pepper (optional)
- Wooden skewers (soaked in water)
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper or foil.
- Peel and cut the sweet potatoes into 1-inch chunks, then toss them with olive oil and spread them out on the prepared baking sheet. Roast for 20-25 minutes until the sweet potatoes are tender but still hold their shape.
- While the sweet potatoes are roasting, cook the bacon strips in a frying pan until partially cooked but still pliable, about 5-6 minutes. Drain the bacon on paper towels.
- Once the sweet potatoes have cooled slightly, thread a piece of sweet potato followed by a strip of bacon (wrapped around the potato) onto the soaked wooden skewers, alternating between the two ingredients.
- In a small bowl, mix together the brown sugar, granulated sugar, cinnamon, nutmeg, cloves, and optional cayenne pepper. Generously sprinkle this sugar-spice mixture over the assembled skewers, ensuring the bacon and sweet potato are well coated.
