  • 1 large cucumber, peeled and thinly sliced

  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh dill, chopped (optional)
  • 1 tablespoon sesame seeds (optional)
  • 1 tablespoon lemon juice (optional for added zest

Instructions

1. Begin by peeling and grating the carrots using a box grater or food processor. For the cucumbers, peel them and then slice them thinly, either with a knife or a mandoline slicer. Place the grated carrots and sliced cucumbers in a large mixing bowl.

2. In a small bowl, whisk together the olive oil, rice vinegar, honey or maple syrup, salt, and black pepper. If you’re using the optional lemon juice, add it to the dressing as well.

3. Pour the dressing over the prepared vegetables and toss everything together until the carrots and cucumbers are evenly coated. If you’re using the optional dill or sesame seeds, sprinkle them over the top and gently mix them in.

4. For the best texture and flavor, let the Carrot and Cucumber Salad sit for about 10 minutes to allow the flavors to blend. Alternatively, you can refrigerate the salad for 30 minutes or up to 1 day before serving, to give the vegetables a nice, refreshing crunch.
