Instructions

1. Begin by peeling and grating the carrots using a box grater or food processor.

2. For the cucumbers, peel them and then slice them thinly, either with a knife or a mandoline slicer.

3. Place the grated carrots and sliced cucumbers in a large mixing bowl.

4. In a small bowl, whisk together the olive oil, rice vinegar, honey or maple syrup, salt, and black pepper.

5. If you’re using the optional lemon juice, add it to the dressing as well.

6. Pour the dressing over the prepared vegetables and toss everything together until the carrots and cucumbers are evenly coated.
