Ingredients
- 3 large baking potatoes
- 1/2 teaspoon kosher salt

- 1 1/2 cup shredded Cheddar cheese
- 8 slices bacon, cooked and crumbled

Instructions
1. Preheat your oven to 350°F (175°C).
2. Cut each potato in half lengthwise, then slice each half into three equal wedges. Be sure to slice a small amount off the top of each wedge so they sit flat on the baking sheet.
3. In a large pot, pour enough vegetable oil to reach a depth of about 2 inches. Heat the oil to 350°F (175°C). Fry the potato wedges in batches until they are golden brown and crispy, about 5-7 minutes per batch. Transfer the fried wedges to a paper towel-lined tray to drain.
4. Arrange the fried potato wedges on a baking sheet and season them with the kosher salt and coarse ground black pepper.
5. Sprinkle the shredded Cheddar cheese evenly over the seasoned potato wedges. Then, add half of the crumbled bacon on top of the cheese.
6. Place the baking sheet in the preheated oven and bake for 15 minutes, or until the cheese is melted and bubbly. Finally, sprinkle the remaining crumbled bacon on top and bake for an additional 5 minutes.
