- 2 large flour tortillas
- 3 large eggs
- 2 tablespoon milk
- 1 tablespoon butter
- 2/3 cup shredded cheddar cheese
- Salt to taste
- Black pepper to taste
Instructions
- Whisk the eggs with milk (if desired) and season with salt and pepper.
- Melt the butter in a nonstick skillet over medium heat, then add the egg mixture and cook, stirring occasionally, until the eggs are just set.
- Wipe the skillet clean and place one tortilla in the pan over medium heat. Sprinkle half of the cheddar cheese over the tortilla, then top with scrambled eggs and the remaining cheese. Place the second tortilla on top.
- Cook the quesadilla for 2 to 3 minutes until the bottom is lightly golden and cheese starts to melt. Flip and cook for another 1 to 2 minutes until both sides are crispy and cheese is fully melted.
- Slide the quesadilla onto a cutting board, let it rest for a minute, then slice into wedges and serve with toppings.
