Ingredients
- 1 pound ground beef
- 1 package (9 ounce) refrigerated cheese tortellini
- 1 can (10 ounce) red enchilada sauce
- 1/2 cup cream cheese
- 1 cup shredded mozzarella cheese
- 1/2 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1/2 teaspoon ground cumin
- Salt and pepper to taste
- Fresh cilantro (optional, for garnish)
Instructions
1. Cook the ground beef with the diced onion and minced garlic over medium heat until browned. Drain excess fat.
2. Stir in the chili powder, cumin, salt, and pepper. Mix well.
3. Cook the tortellini according to package directions. Drain and set aside.
4. Add the enchilada sauce and cream cheese to the beef mixture. Stir until creamy.
5. Gently fold the cooked tortellini into the beef mixture.
6. Sprinkle shredded mozzarella cheese over the top, cover, and let it melt for 2-3 minutes.
7. Garnish with fresh cilantro if desired and serve warm.
Notes
For a healthier twist, opt for lean ground beef, low-fat cream cheese, and reduced-fat mozzarella cheese.
