Description

A comforting Cheesy Ground Beef and Potato Casserole that combines tender potatoes, seasoned ground beef, and melted cheddar cheese.


Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium potatoes, peeled and diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon dried oregano
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 1 tablespoon fresh parsley, chopped

Instructions

1. Preheat your oven to 375°F and grease a medium baking dish.

2. Heat the olive oil in a large skillet over medium heat, then add the onion and garlic. Sauté until the onion is softened, about 3-5 minutes. Add the ground beef and cook until browned and cooked through. Drain excess fat.

3. Stir in the salt, pepper, paprika, and oregano. Add the diced potatoes and beef broth, mixing well. Let simmer for about 5 minutes.

4. Transfer the mixture to the prepared baking dish. Sprinkle the shredded cheddar cheese evenly over the top. Cover with foil and bake for 25 minutes.

5. Remove the foil and continue baking for another 15 minutes, or until the potatoes are tender and the cheese is bubbly and golden brown. Sprinkle fresh parsley over the top and serve warm.

Notes

To avoid overcooked potatoes, simmer them with the beef mixture for just 5 minutes before baking.

Spread the mixture evenly in the baking dish to ensure even cooking.

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or oven at 350°F until heated through.
