Ingredients
- 4 large russet potatoes
- 1 pound ground beef
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/4 cup diced tomatoes
- 1/4 cup sliced black olives
- 1/4 cup chopped cilantro
- 1 tablespoon olive oil
- Salt to taste

Instructions
1. Preheat your oven to 400°F. Wash the potatoes and pierce them with a fork a few times. Bake for 45-50 minutes until tender.
2. Heat olive oil in a skillet over medium heat. Add ground beef and cook until browned. Stir in taco seasoning and a splash of water, simmer for 5 minutes.
3. Chop green onions, dice tomatoes, slice black olives, and chop cilantro.
4. Remove potatoes from the oven, let cool slightly, slice open, and fluff insides with a fork. Season with salt and pepper. Top with ground beef, cheddar cheese, sour cream, and prepared toppings.
5. Garnish with additional chopped cilantro if desired and serve warm.
