- 1 lb ground beef
- ½ cup diced onion
- 2 cloves garlic, minced
- 3 cup sweet potatoes, cubed
- 2 tablespoon taco seasoning
- 1 cup water
- 1 cup frozen corn
- 1 poblano pepper, seeded and diced
- 1 cup shredded cheese
Instructions
- In a large nonstick skillet, brown the ground beef and diced onions over medium heat for about 10 minutes. Drain any excess fat.
- Stir in the minced garlic, cubed sweet potatoes, taco seasoning, water, frozen corn, and diced poblano pepper. Cover the skillet and cook for 12-15 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
- Remove the lid and continue cooking over medium-low heat for 3-5 minutes to allow any remaining liquid to evaporate, creating a thicker, more cohesive texture.
- Sprinkle the shredded cheese over the top of the skillet, then cover briefly to allow the cheese to melt.
- Garnish the Cheesy Tex-Mex Ground Beef & Sweet Potato Skillet with fresh cilantro, avocado, and a dollop of sour cream, if desired.
