Description

Weeknights just got a whole lot tastier with this delectable Cheesy Tex-Mex Ground Beef & Sweet Potato Skillet. This nutrient-packed, one-pan wonder combines savory seasoned beef, naturally sweet potatoes, fresh peppers, and gooey cheese for a flavor explosion that’s sure to satisfy the whole family.


Ingredients

  • 1 lb ground beef
  • ½ cup diced onion
  • 2 cloves garlic, minced
  • 3 cup sweet potatoes, cubed
  • 2 tablespoon taco seasoning
  • 1 cup water
  • 1 cup frozen corn
  • 1 poblano pepper, seeded and diced
  • 1 cup shredded cheese

Instructions

  1. In a large nonstick skillet, brown the ground beef and diced onions over medium heat for about 10 minutes. Drain any excess fat.
  2. Stir in the minced garlic, cubed sweet potatoes, taco seasoning, water, frozen corn, and diced poblano pepper. Cover the skillet and cook for 12-15 minutes, stirring occasionally, until the sweet potatoes are fork-tender.
  3. Remove the lid and continue cooking over medium-low heat for 3-5 minutes to allow any remaining liquid to evaporate, creating a thicker, more cohesive texture.
  4. Sprinkle the shredded cheese over the top of the skillet, then cover briefly to allow the cheese to melt.
  5. Garnish the Cheesy Tex-Mex Ground Beef & Sweet Potato Skillet with fresh cilantro, avocado, and a dollop of sour cream, if desired.
