This one-pot wonder is a true gem in the culinary world, blending tender chicken, vibrant broccoli, and the unique texture of orzo pasta into a harmonious dish that’s sure to become a family favorite.

Ingredients

Scale
  • 1 tablespoon cooking oil
  • 2 pound boneless, skinless chicken breast
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon butter
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cup broccoli florets
  • 1 cup orzo pasta
  • 4 cup chicken stock
  • 1/2 cup parmesan cheese, grated
  • 1/2 cup cheddar cheese, shredded
  • 2 tablespoon lemon juice
  • 1/4 cup fresh herbs, chopped

Instructions

1. Heat the cooking oil in a large skillet over medium heat. Season the chicken with salt and pepper, then cook until golden and cooked through. Remove the chicken from the skillet and set it aside.

2. In the same skillet, melt the butter. Add the onion and garlic, and sauté until they become fragrant and softened.

3. 3. Stir in the orzo and toast it for 1-2 minutes, then add the broccoli florets and mix everything together well.

4. Pour in the chicken stock and bring the mixture to a simmer. Cook, stirring occasionally, until the orzo is tender and most of the liquid has been absorbed, about 10-12 minutes.

5. Stir in the parmesan and cheddar cheeses, then add the cooked chicken back to the skillet. Toss everything together until the cheese is melted and the chicken is well incorporated.

6. Add the fresh lemon juice and stir in the chopped fresh herbs. Taste and adjust the seasoning as needed.

7. Serve the Chicken and Broccoli Orzo warm, garnished with extra fresh herbs if desired.

Notes

Taste and adjust the seasoning as you go. It’s important to taste the dish at different stages and add more salt, pepper, or herbs as needed to achieve the perfect balance of flavors.

Don’t overcook the orzo. Keep an eye on the cooking time and remove the dish from the heat when the orzo is tender but still has a slight bite to it. Overcooked orzo can become mushy.

Properly store and reheat leftovers. Chicken and Broccoli Orzo can be stored in an airtight container in the refrigerator for up to 4 days. When reheating, add a splash of broth or water to maintain the creamy texture.
