Chicken and Garlic Gravy with Cheesy Mashed Potatoes is the ultimate comfort food combination that will have your taste buds singing. Tender chicken smothered in a rich, garlicky gravy, served alongside creamy, cheesy mashed potatoes – this dish is the epitome of home-cooked goodness.
Ingredients
- 2 pieces boneless skinless chicken breasts or thighs
- 6 cloves garlic, minced
- 2 tablespoon butter
- 2 tablespoon all-purpose flour
- 1 ½ cup chicken broth
- ¼ cup heavy cream (optional)
- 2 pound Yukon Gold potatoes, peeled and cubed
- ½ cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper, to taste
- 1 tablespoon chopped fresh parsley or chives, for garnish
Instructions
1. Start by seasoning the chicken with salt and pepper. In a large skillet over medium heat, cook the chicken until it’s golden brown and cooked through, about 5-7 minutes per side. Remove the chicken from the skillet and set it aside.
2. In the same skillet, melt the butter and sauté the minced garlic until fragrant. Stir in the flour and cook for 1-2 minutes. Gradually whisk in the chicken broth and heavy cream (if using), simmering until the gravy reaches the desired thickness. Season with salt and pepper to taste.
3. While the chicken and gravy are cooking, bring a pot of salted water to a boil and add the peeled and cubed Yukon Gold potatoes. Cook until tender, about 15-20 minutes. Drain and mash with milk, shredded cheddar cheese, salt, and pepper.
4. To serve, slice the cooked chicken and pour the garlic gravy over the top. Scoop the cheesy mashed potatoes onto the plate, and garnish with freshly chopped parsley or chives.
