Ingredients

  • 1 pound grilled chicken breast
  • 2 cup mixed salad greens (Romaine, spinach, and arugula)
  • 1 avocado
  • 4 hard-boiled eggs
  • 4 ounce crumbled blue cheese or feta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, thinly sliced
  • 3 tablespoon olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • salt and pepper to taste

Instructions

  1. Heat a skillet over medium heat and add 1 tablespoon of olive oil.
  2. Season the chicken breasts with salt and pepper on both sides and cook for 6-8 minutes per side until the internal temperature reaches 165°F. Remove from heat and let rest before slicing.
  3. In a large bowl, arrange the mixed greens as the base of the salad.
  4. Top the greens with sliced avocado, hard-boiled egg slices, crumbled cheese, halved cherry tomatoes, and sliced red onion.
  5. In a small bowl, whisk together 3 tablespoon of olive oil, 1 tablespoon of red wine vinegar, 1 teaspoon of Dijon mustard, and 1 teaspoon of honey. Season with salt and pepper.
