Description

Chicken Rice-a-Roni Casserole is a beloved comfort food that combines the classic flavors of tender chicken and the iconic Rice-a-Roni side dish. This easy-to-make casserole is a one-dish wonder that’s perfect for busy weeknights or cozy family gatherings. With its creamy, cheesy filling and a crispy topping, it’s no wonder why this dish has become a go-to favorite for so many households.

Ingredients

Scale
  • 1 box Rice-a-Roni (chicken flavor)
  • 2 cup cooked and shredded chicken
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup crushed Ritz crackers or breadcrumbs

Instructions

1. 1. Start by preparing the Rice-a-Roni according to the package instructions. Once it’s cooked, set it aside and let it cool slightly while you work on the other ingredients.

2. 2. In a large mixing bowl, combine the cooked and shredded chicken, sour cream, cream of chicken soup, and milk. Stir everything together until well combined. Then, gently fold in the cooked Rice-a-Roni and the shredded cheddar cheese.

3. 3. Preheat your oven to 350°F. Grease a 9×13-inch baking dish and pour the rice and chicken mixture into it, spreading it out evenly.

4. 4. In a small bowl, mix the crushed Ritz crackers with the melted butter. Sprinkle this mixture over the top of the casserole. Bake the Chicken Rice-a-Roni Casserole for 25-30 minutes, or until it’s bubbly and the topping is golden brown.

Notes

This casserole is perfect for making ahead of time. Assemble the dish, cover it, and refrigerate it for up to 24 hours before baking. You can also freeze the unbaked casserole for up to 3 months. When ready to serve, simply thaw it in the refrigerator overnight and bake as directed.
