- 1 1/2 pound boneless skinless chicken thighs
- 3 tablespoon fresh lime juice
- 2 tablespoon olive oil
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 8–12 small corn tortillas
- 1/2 cup white onion, finely chopped
- 1/2 cup fresh cilantro, chopped
- Lime wedges for serving
Instructions
- Whisk together lime juice, olive oil, garlic, cumin, chili powder, paprika, oregano, salt, and pepper in a large bowl.
- Add chicken thighs and toss to coat evenly. Cover and refrigerate for at least 30 minutes or up to 8 hours.
- Heat a skillet or grill over medium-high heat. Remove chicken from marinade and cook for 5-7 minutes per side until internal temperature reaches 165°F.
- Transfer cooked chicken to a cutting board and let it rest for 5 minutes before slicing or dicing into bite-sized pieces.
- Warm corn tortillas in a dry skillet over medium heat or microwave wrapped in a damp paper towel for 30 seconds to 1 minute.
- Assemble tacos by placing chicken in the center of each tortilla and topping with onion and cilantro. Serve with lime wedges.
