- 4 pieces boneless skinless chicken breasts

- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1/2 cup chicken broth
- 1 package (5.2 ounce) Boursin Garlic & Fine Herbs cheese
- 2 cup fresh spinach (optional)
- Chopped parsley (for serving)
Instructions
- Season the chicken breasts with salt and black pepper. Heat the olive oil and butter in a large skillet over medium-high heat. Add the chicken and cook for 5-6 minutes per side until golden brown and cooked through. Transfer the chicken to a plate.
- Reduce the heat to medium and add the chicken broth to the skillet. Scrape up any browned bits from the bottom of the pan. Add the Boursin cheese and stir until melted and smooth, creating a creamy sauce.
- If using, stir the fresh spinach into the sauce and cook just until wilted.
- Return the seared chicken (and any accumulated juices) to the skillet and spoon the Boursin sauce over the top. Simmer for 1-2 minutes to warm everything through.
- Plate the Chicken with Boursin Sauce and garnish with chopped parsley, if desired. Enjoy this creamy, flavorful dish immediately.
