Ingredients
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- 8 ounce egg noodles
- 4 tablespoon unsalted butter
- 2 tablespoon olive oil
- 1 teaspoon garlic, minced
- 1/2 teaspoon salt
- Freshly ground black pepper, to taste
- Fresh parsley or basil, chopped
Instructions
1. Season the chicken breasts with salt, pepper, garlic powder, onion powder, and dried thyme.
2. In a large skillet, heat the olive oil over medium-high heat. Add the chicken breasts and cook for 6-7 minutes per side until golden brown and cooked through.
3. Let the chicken rest for a few minutes before slicing.
4. Bring a large pot of salted water to a boil. Add the egg noodles and cook according to package instructions until al dente. Drain and set aside.
5. In the same skillet, melt the butter and olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes.
6. Toss the cooked noodles into the garlic-butter mixture. If dry, add reserved pasta water to achieve desired consistency.
7. Season with salt and freshly ground black pepper. Slice the cooked chicken and place atop the buttered noodles. Garnish with fresh parsley or basil if desired.
