Description

A quick and easy one-pan meal that’s bursting with flavor and nutrition, combining juicy chicken sausage, tender zucchini, and small-shape pasta in a savory broth.


Ingredients

  • 1 pound Italian style chicken sausages
  • 1 tablespoon olive oil
  • 1 cup diced onion
  • 3 cloves minced garlic
  • 1/4 teaspoon crushed red pepper (optional)
  • 3 cup chicken broth
  • 8 ounce uncooked small-shape pasta
  • 2 cup chopped zucchini
  • 2 tablespoon lemon juice
  • 3/4 cup grated Parmesan cheese
  • 1 cup grape tomatoes
  • 1/4 cup fresh basil

Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the chicken sausages and diced onion, cooking until the sausage is browned and the onion is tender.

2. Stir in the salt, crushed red pepper (if using), and minced garlic. Cook until the garlic is fragrant, then pour in the chicken broth, scraping up any browned bits from the bottom of the pan. Bring the mixture to a boil.

3. Add the uncooked pasta to the boiling broth, stirring frequently for about 10 minutes until the pasta is mostly tender.

4. Stir in the chopped zucchini and continue cooking for an additional 3 minutes, or until the zucchini is tender and most of the broth has been absorbed.

5. Remove the skillet from the heat and stir in the lemon juice, 3 tablespoon of Parmesan cheese, and the grape tomatoes. Top with the fresh, chopped basil and the remaining Parmesan cheese.
