Instructions
- Slice the chicken breasts into thin strips and season them with salt and pepper.
- Slice the zucchini into half-moon shapes, ensuring they are all roughly the same size for even cooking.
- Heat a large skillet or wok over medium-high heat, and add the olive oil.
- Add the sliced chicken to the hot pan and cook for 5-6 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the pan and set it aside.
- In the same pan, add the minced garlic and cook for 30 seconds, just until fragrant.
- Add the sliced zucchini to the pan and stir-fry for 3-4 minutes, until it’s tender but still maintains a slight crunch.
- Return the cooked chicken to the pan, then add the soy sauce, oyster sauce, and sesame oil. Toss everything together and cook for an additional 1-2 minutes.
