Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 medium zucchini
  • 2 cloves garlic
  • 2 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Slice the chicken breasts into thin strips and season them with salt and pepper.
  2. Slice the zucchini into half-moon shapes, ensuring they are all roughly the same size for even cooking.
  3. Heat a large skillet or wok over medium-high heat, and add the olive oil.
  4. Add the sliced chicken to the hot pan and cook for 5-6 minutes, stirring occasionally, until the chicken is golden brown and cooked through. Remove the chicken from the pan and set it aside.
  5. In the same pan, add the minced garlic and cook for 30 seconds, just until fragrant.
  6. Add the sliced zucchini to the pan and stir-fry for 3-4 minutes, until it’s tender but still maintains a slight crunch.
  7. Return the cooked chicken to the pan, then add the soy sauce, oyster sauce, and sesame oil. Toss everything together and cook for an additional 1-2 minutes.

Notes
