Ingredients
- 2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 1/4 cup packed light brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 ripe medium bananas, mashed
- 1 cup semi-sweet chocolate chips, plus more for sprinkling
Instructions
1. Preheat your oven to 350°F. Line a 12-cup muffin tin with paper liners or lightly grease it.
2. In a medium bowl, whisk together the flour, baking soda, and salt.
3. In a large bowl, whisk the melted butter, granulated sugar, and brown sugar until smooth. Add the eggs, vanilla, and mashed bananas, mixing until well combined.
4. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix. Fold in the chocolate chips.
5. Divide the batter evenly among the prepared muffin cup, filling them about 3/4 full. Sprinkle extra chocolate chips on top of the batter.
6. Bake the muffins for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
7. Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
