Ingredients

  • 2 1/2 cup all-purpose flour
  • 2 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, very cold and sliced
  • 3 tablespoon sour cream, very cold
  • 1/2 cup ice-cold water
  • 3 pound apples, peeled and sliced (about 7 medium-sized)
  • 3 tablespoon all-purpose flour
  • 3/4 cup sugar
  • juice and zest of 1 lemon
  • 1/4 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 2 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1 egg
  • 1/2 teaspoon water

Instructions

1. Whisk together the flour, sugar, and salt for the crust.

2. Cut in the cold butter until the mixture resembles coarse crumbs.

3. Mix in the sour cream and gradually add ice-cold water until the dough comes together.

4. Divide the dough into two portions, wrap in plastic, and refrigerate for at least 30 minutes.

5. Preheat the oven to 425°F and place a baking sheet inside.

6. Roll out one half of the dough to a 12-inch diameter and place it in a 9-inch pie dish.

7. Fill with the apple mixture, mounding it in the center.

8. Roll out the remaining dough, place it over the filling, and seal the edges.

9. Whisk together the egg and water for an egg wash and brush it over the top crust.

10. Cut vents in the top crust and sprinkle with sugar.

11. Bake at 425°F for 25 minutes, then reduce to 375°F and bake for an additional 35 minutes.
