Cottage Cheese Egg Bites are a nutritious and satisfying breakfast option, combining protein, healthy fats, and savory flavors for a delicious meal-prep choice.
Ingredients
- 8 large eggs
- 1 cup cottage cheese (0% – 2% fat recommended)
- 1/2 cup shredded cheese (cheddar or feta)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
Instructions
1. Preheat your oven to 350°F. Grease a 12-cup muffin tin or line it with silicone liners.
2. In a blender, combine the eggs, cottage cheese, shredded cheese, salt, pepper, garlic powder, and onion powder. Blend until smooth.
3. Pour the blended mixture into a mixing bowl. Gently fold in your chosen mix-ins.
4. Evenly distribute the egg mixture among the 12 muffin cup.
5. Place the muffin tin in the preheated oven and bake for 22–25 minutes, or until the egg bites are set and lightly golden on top.
6. Allow the egg bites to cool slightly before removing them from the tin. Serve warm or store for later.
Notes
Optional mix-ins can include diced bell peppers, chopped spinach, cooked bacon bits, diced ham, sautéed mushrooms, chopped green onions, chopped sun-dried tomatoes, or crumbled feta cheese.
