Ingredients

  • 1 lb fresh green beans, trimmed and cut into bite-sized pieces
  • 4 cup baby potatoes or regular potatoes, peeled and diced
  • 6 slices bacon, chopped into small pieces
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 packet ranch seasoning mix
  • 1 cup chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Optional: Shredded cheddar cheese for garnish

Instructions

  1. Heat a large skillet or Dutch oven over medium heat. Add the chopped bacon and cook until crispy and golden brown. Remove the cooked bacon from the pan, leaving the drippings behind.
  2. Add the diced onion to the skillet and sauté for about 5 minutes, until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.
  3. Toss in the diced potatoes and let them cook for 5-7 minutes, stirring occasionally, until they develop a slightly crispy exterior.
  4. Add the fresh green beans, ranch seasoning mix, dried thyme, and dried rosemary. Pour in the chicken broth.
  5. Cover the skillet, reduce heat to low, and let simmer for 15-20 minutes until the vegetables are tender.
  6. Stir the crispy bacon back into the skillet. Adjust seasoning with salt and pepper as needed.
  7. Serve in a dish and garnish with shredded cheddar cheese if desired.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat with a splash of chicken broth or water.
