- 1 lb fresh green beans, trimmed and cut into bite-sized pieces
- 4 cup baby potatoes or regular potatoes, peeled and diced
- 6 slices bacon, chopped into small pieces
- 1 onion, diced
- 2 cloves garlic, minced
- 1 packet ranch seasoning mix
- 1 cup chicken broth
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- Salt and pepper, to taste
- Optional: Shredded cheddar cheese for garnish
Instructions
- Heat a large skillet or Dutch oven over medium heat. Add the chopped bacon and cook until crispy and golden brown. Remove the cooked bacon from the pan, leaving the drippings behind.
- Add the diced onion to the skillet and sauté for about 5 minutes, until soft and translucent. Stir in the minced garlic and cook for another minute until fragrant.
- Toss in the diced potatoes and let them cook for 5-7 minutes, stirring occasionally, until they develop a slightly crispy exterior.
- Add the fresh green beans, ranch seasoning mix, dried thyme, and dried rosemary. Pour in the chicken broth.
- Cover the skillet, reduce heat to low, and let simmer for 15-20 minutes until the vegetables are tender.
- Stir the crispy bacon back into the skillet. Adjust seasoning with salt and pepper as needed.
- Serve in a dish and garnish with shredded cheddar cheese if desired.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat with a splash of chicken broth or water.
