Ingredients
- 1 can (15 ounce) black beans
- 1 can (15 ounce) black-eyed peas
- 2 cup diced tomatoes
- 1 jalapeño, diced
- 1 cup corn
- 1 avocado, chopped
- 1 orange bell pepper, diced
- 1/2 cup red onion, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup olive oil
- 1/4 cup lime juice
- 1 tablespoon honey
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. In a large bowl, combine the rinsed and drained black beans, black-eyed peas, diced tomatoes, jalapeño, corn, chopped avocado, bell pepper, red onion, and fresh cilantro.
2. In a small bowl, whisk together the olive oil, lime juice, honey, chili powder, cumin, salt, and pepper to create the dressing.
3. Pour the dressing over the vegetable and bean mixture, and gently toss to coat everything evenly.
4. Cover the bowl and refrigerate for at least 30 minutes, allowing the flavors to meld and the ingredients to chill.
