Description
Cowboy Corn Dip is a creamy, cheesy dip that combines corn with bold Southwest spices, perfect for parties and gatherings.
Ingredients
- 2 cup corn, canned or frozen (thawed) or fresh (grilled)
- 8 ounce cream cheese, softened
- 1/2 cup sour cream
- 1 1/2 cup shredded cheese (cheddar, pepper jack, or Mexican blend)
- 1–2 jalapeños, diced
- 1 can (10 ounce) Rotel tomatoes, drained
- 1/2 cup bacon, cooked and crumbled (optional)
- 1/4 cup cilantro, chopped, plus extra for garnish
- 1/4 cup green onions, chopped, plus extra for garnish
- 1 tablespoon lime juice, fresh
- Salt and black pepper, to taste
Instructions
1. In a large bowl, combine the softened cream cheese and sour cream until smooth and creamy.
2. Stir in the shredded cheese, diced jalapeños, drained Rotel tomatoes, crumbled bacon (if using), chopped cilantro, chopped green onions, and lime juice. Mix well to incorporate the flavors.
3. Gently fold in the corn until evenly distributed. Season with salt and black pepper to taste.
4. Cover and refrigerate for at least 1 hour before serving. Garnish with extra cilantro and green onions. Serve with tortilla chips or your favorite dippers.
Notes
This dip can be made ahead of time and stored in the refrigerator. Reheat before serving if desired.
