Cowboy Steak and Potato Casserole is a hearty, one-dish wonder that combines the bold flavors of juicy steak and the comforting goodness of roasted potatoes, all baked to perfection in a creamy, cheesy sauce.
Ingredients
- 1 pound steak (sirloin or ribeye, cut into bite-sized pieces)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1 1/2 pound baby potatoes, quartered
- 1 tablespoon olive oil
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/4 cup green onions, sliced
- 1/4 cup sour cream (optional for serving)
Instructions
1. Preheat your oven to 400°F and lightly grease a 9×13-inch baking dish.
2. In a large bowl, toss the steak pieces with Worcestershire sauce, smoked paprika, garlic powder, onion powder, salt, and pepper.
3. In a separate bowl, toss the baby potatoes with olive oil and a pinch of salt. Spread the potatoes evenly in the prepared baking dish and bake for 20 minutes.
4. Remove the dish from the oven, stir the potatoes, and add the seasoned steak pieces over the top. Return the casserole to the oven and bake for an additional 15-18 minutes.
5. Once cooked, sprinkle the dish with shredded cheddar cheese and crumbled bacon. Bake for 5 more minutes until the cheese melts. Garnish with sliced green onions and serve with sour cream if desired.
Notes
Feel free to swap out the steak for ground beef or turkey, add in your favorite veggies, or experiment with different cheese varieties.
