Ingredients
- 2 medium sweet potatoes
- 1 cup fresh cranberries
- 1 cup chopped apples
- 1/4 cup brown sugar
- 1 teaspoon ground cinnamon
- 2 tablespoon unsalted butter
- 1/4 teaspoon salt
Instructions
1. Preheat your oven to 400°F.
2. Wash the sweet potatoes and pierce them several times with a fork. Place the potatoes directly on the oven rack or on a baking sheet and bake for 45-60 minutes, until they’re tender when pierced with a fork.
3. Once the sweet potatoes are cool enough to handle, slice them in half lengthwise and scoop out most of the flesh into a bowl, leaving about 1/4 inch of potato around the edges.
4. In the bowl with the sweet potato flesh, add the chopped apples, cranberries, brown sugar, cinnamon, butter, and salt. Mash everything together using a fork until well combined, but still slightly chunky.
5. Spoon the sweet potato mixture back into the reserved skins, packing it in gently.
6. Place the filled sweet potatoes back in the oven at 350°F, and bake for 20-25 minutes until heated through and slightly caramelized on top.
