Ingredients
- 2 boneless, skinless chicken breasts

- 1/2 cup panko breadcrumbs
- 1 tablespoon butter, melted
Instructions
1. 1. Preheat your oven to 375°F. Line a baking dish with parchment or lightly grease it.
2. 2. In a saucepan over medium heat, combine the cranberries, honey, orange juice, cinnamon, and ginger. Cook until the cranberries burst and the mixture thickens, about 8–10 minutes. Set aside to cool slightly.
3. 3. Slice a pocket in each chicken breast without cutting all the way through. Season the inside and outside of the chicken with salt and pepper.
4. 4. Fill each pocket with the brie, a spoonful of the cranberry sauce, and chopped parsley.
5. 5. In a small bowl, mix the panko with the melted butter. Press the mixture onto the top of each stuffed breast.
