  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon orange zest

  • 1 cup fresh cranberries
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1/2 cup chopped walnuts (optional)

Instructions

1. Preheat your oven to 350°F. Grease a 9×5-inch loaf pan with cooking spray or line it with parchment paper.

2. In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Whisk until well blended.

3. In a separate bowl, whisk together the orange zest, orange juice, eggs, and vegetable oil until smooth.

4. Pour the wet ingredients into the dry ingredients and mix gently until just combined. A few lumps are fine.

5. Gently fold in the fresh cranberries and chopped walnuts (if using) until evenly distributed.

6. Transfer the batter to the prepared loaf pan and smooth the top. Bake for 30–40 minutes, or until a toothpick inserted into the center comes out clean.

7. Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Slice and enjoy.
