Description

Creamy Biscoff Cheesecake Bars are a decadent dessert combining Biscoff cookies and creamy cheesecake, perfect for any occasion.


Ingredients

  • 1 1/2 cup Biscoff cookie crumbs
  • 1/4 cup salted butter, melted
  • 2 cup full-fat cream cheese, room temperature
  • 1/4 cup cookie butter
  • 2/3 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup cookie butter

Instructions

1. Preheat your oven to 325°F. Line an 8-inch square baking pan with parchment paper.

2. In a mixing bowl, combine the Biscoff cookie crumbs and melted butter until evenly moistened. Press into the bottom of the prepared pan. Bake for about 8 minutes, then let cool.

3. Beat the cream cheese and cookie butter together until smooth. Add the granulated sugar and mix until combined. Add the eggs one at a time, mixing until smooth. Stir in the vanilla extract.

4. Pour the cheesecake filling over the cooled crust. Drizzle melted cookie butter over the top and create a swirled pattern.

5. Bake at 325°F for 43-48 minutes, until edges are set and center has a slight jiggle.

6. Cool on a wire rack for about 1 hour, then chill in the refrigerator for at least 2 hours or overnight before serving.

7. Slice into squares and serve chilled, optionally garnished with melted cookie butter or crushed Biscoff cookies.
