Ingredients
- 4 boneless, skinless chicken breasts (about 1 1/2 pound)
- 1 cup orzo pasta
- 8 ounce Boursin cheese (garlic & herb flavor)
- 2 cup fresh spinach
- 2 cup low-sodium chicken broth
- 2 tablespoon olive oil
- 4 garlic cloves, minced
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
1. Season the chicken breasts with salt, pepper, and dried oregano.
2. In a large skillet heated with olive oil, sear the chicken breasts for 5-6 minutes per side until golden-brown. Remove and set aside.
3. In the same skillet, add minced garlic and sauté until fragrant, about 1 minute.
4. Add orzo and chicken broth to the skillet, simmer for 8-10 minutes until orzo is tender.
5. Stir in Boursin cheese until melted and creamy. Add fresh spinach and let it wilt.
6. Slice the chicken breasts and place them on top of the creamy orzo. Spoon sauce over chicken.
Notes
For a healthier version, use whole grain orzo, grilled chicken, and increase vegetable content.
